
2 cups grated juiced Coconut ( ca 1 coconut) 6 tbsp coconut oil
1 cup coconut milk 4 tsp baking powder
1 cup sorghum flour 2 tsp salt
4 eggs 4 tsp coconut sugar

Place the grated coconut in a pot and add water until its covered, than squeeze the coconut (a strainer will help to get it clear) to get the milk out of it

put all ingredients together (use your self made coconut milk and the squeezed coconut grates) stir it and put it in baking form

bake it for 40 to 50 min in 180°C

let it cool down for a bit and enjoy the taste
notes:
– You can substitute with any flour instead of sorghum
– instead of using the leftovers of making your own coconut milk
you can use coconut flour
– If you want it sweeter, you can add more sugar
